Black Pepper Salmon and Potatoes with Tomato Salsa

Ingredients
- 880g salmon
- 1 tbsp peppercorns
- 30g brown sugar
- 15g salt
- 25g dill
- 1 fresh red chilli
- 3 medium tomatoes
- 1/2 cucumber
- 2 spring onions
- 2 tsp red wine vinegar
- 250g new potatoes
- 40g rocket
- Zest and juice of 1 lemon
Instructions
Mix salt, pepper, sugar, dill.
Marinate salmon 1-2 hours.
Preheat oven 180C.
Bake salmon 15 mins.
Boil potatoes 15-20 mins.
Dice tomatoes, chilli, dill, cucumber, onion, lemon, vinegar into salsa.
Serve with salmon, potatoes, rocket.
