Ingredients
  

  • - 160g pre-cooked beetroot
  • - 1 clove garlic
  • - 30g spring onion
  • - 150g Greek yoghurt
  • - 10g lime juice
  • - 100g quinoa
  • - 100g feta
  • - 60g red cabbage
  • - 40g grated carrot
  • - 80g spinach

Instructions
 

  • Cook quinoa.
  • Blend beetroot, garlic, spring onions, yoghurt, lime juice.
  • Slice cabbage, carrot, spinach.
  • Mix dressing, quinoa, feta, veg.
  • Serve.
