Ingredients
- 160g pre-cooked beetroot
- 1 clove garlic
- 30g spring onion
- 150g Greek yoghurt
- 10g lime juice
- 100g quinoa
- 100g feta
- 60g red cabbage
- 40g grated carrot
- 80g spinach
Instructions
Cook quinoa.
Blend beetroot, garlic, spring onions, yoghurt, lime juice.
Slice cabbage, carrot, spinach.
Mix dressing, quinoa, feta, veg.
Serve.
