Black Pepper Salmon and Potatoes with Tomato Salsa

Ingredients
  

  • - 880g salmon
  • - 1 tbsp peppercorns
  • - 30g brown sugar
  • - 15g salt
  • - 25g dill
  • - 1 fresh red chilli
  • - 3 medium tomatoes
  • - 1/2 cucumber
  • - 2 spring onions
  • - 2 tsp red wine vinegar
  • - 250g new potatoes
  • - 40g rocket
  • - Zest and juice of 1 lemon

Instructions
 

  • Mix salt, pepper, sugar, dill.
  • Marinate salmon 1-2 hours.
  • Preheat oven 180C.
  • Bake salmon 15 mins.
  • Boil potatoes 15-20 mins.
  • Dice tomatoes, chilli, dill, cucumber, onion, lemon, vinegar into salsa.
  • Serve with salmon, potatoes, rocket.
