Black Pepper Salmon and Potatoes with Tomato Salsa
Ingredients
- - 880g salmon
- - 1 tbsp peppercorns
- - 30g brown sugar
- - 15g salt
- - 25g dill
- - 1 fresh red chilli
- - 3 medium tomatoes
- - 1/2 cucumber
- - 2 spring onions
- - 2 tsp red wine vinegar
- - 250g new potatoes
- - 40g rocket
- - Zest and juice of 1 lemon
Instructions
- Mix salt, pepper, sugar, dill.
- Marinate salmon 1-2 hours.
- Preheat oven 180C.
- Bake salmon 15 mins.
- Boil potatoes 15-20 mins.
- Dice tomatoes, chilli, dill, cucumber, onion, lemon, vinegar into salsa.
- Serve with salmon, potatoes, rocket.
