Ingredients
  

  • - 75g butter
  • - 280g cooked beetroot
  • - 300g 70% chocolate
  • - 2 eggs
  • - 100g sugar
  • - 175g erythritol
  • - 60g ground oats
  • - 2 tsp vanilla extract
  • - 1 tsp salt
  • - 4 tbsp cocoa powder

Instructions
 

  • Preheat oven to 180C.
  • Blitz beetroot into puree.
  • Melt chocolate with butter.
  • Mix eggs, sugar, erythritol, vanilla, salt, combine with chocolate, beetroot, oats.
  • Fold in cocoa and remaining chocolate.
  • Bake 35-40 mins.
  • Cool and cut into 12.
