Beetroot Brownie
Ingredients
- - 75g butter
- - 280g cooked beetroot
- - 300g 70% chocolate
- - 2 eggs
- - 100g sugar
- - 175g erythritol
- - 60g ground oats
- - 2 tsp vanilla extract
- - 1 tsp salt
- - 4 tbsp cocoa powder
Instructions
- Preheat oven to 180C.
- Blitz beetroot into puree.
- Melt chocolate with butter.
- Mix eggs, sugar, erythritol, vanilla, salt, combine with chocolate, beetroot, oats.
- Fold in cocoa and remaining chocolate.
- Bake 35-40 mins.
- Cool and cut into 12.
